The Farm
San Carlo alla Molinella is the name we chose for our farm, an affectionate tribute to the toponym of the area where our estate lies. It stretches across 14 hectares of generous land, where we cultivate the fruits of our soil with passion and care.
We are located at about 400 meters above sea level, a position that offers a favorable microclimate for healthy, thriving crops. At the heart of our work is the olive grove, which gently embraces the entire property. Each tree is tended with deep respect, using organic farming practices, careful pruning, and natural fertilization that preserves its vitality and ability to produce precious fruit.
We grow three olive varieties: Leccino, Frantoio, and Moraiolo, from which we produce two exceptional extra virgin olive oils, our signature Blend and a Monocultivar Moraiolo, a native Umbrian variety. Every phase of our production is guided by meticulous attention to detail, ongoing research, and a constant desire to improve year after year.
Harvesting is done exclusively by hand, with a rigorous selection of the best olives, starting in the early stage of ripening, when the fruit is still mostly green. This early picking ensures a superior quality oil, rich in polyphenols—natural compounds that give it depth of flavor and valuable health properties.
It is a special time for us, involving the whole family, a tradition passed down through generations. The result is a product with unmistakable character: well-balanced, full-bodied, and in color, a reflection of our lush, sun-kissed hills.
The cold-pressing process takes place in a certified mill that we have carefully selected to guarantee the highest standards of freshness, purity, and authenticity.
For us, extra virgin olive oil is not just a key ingredient in Mediterranean cuisine, it is a cornerstone of our culture and identity. The earliest evidence of olive oil production dates back over 6,000 years in the Eastern Mediterranean, where it was immediately recognized as a precious and medicinal product. Merchants from across the known world would travel by sea and desert to trade this golden elixir.
Sharing the culture of olive oil means honoring its history, its benefits, and its deep-rooted traditions.
You’ll have the chance to discover all of this with Nicolò, a certified olive oil sommelier, who will guide you through a tasting of our two cultivars, an experience filled with passion, knowledge, and love for this incredible world and the treasure it represents for our region.
And if you’d like to take a bit of that experience home with you, you’ll have the opportunity to purchase our oil, to enjoy with your favorite dishes and share with those you love.
Alongside our olive grove, we also tend to a small orchard filled with seasonal and local varieties: the ancient coscia di monaca plums, lemons, apricots, peaches, cherries, apples, pears, and figs. With these fruits, we prepare homemade jams and preserves, made with simple, authentic recipes, you can taste them here or take them home along with our oil.
For those who wish to connect with nature, our land also offers quiet woodland paths around the property. Here, among the birdsong, the rustle of leaves, and the rhythm of your own footsteps, you can unwind, reconnect, and restore your sense of well-being.
San Carlo alla Molinella is more than just a place to visit—it’s an experience to live. A return to the essentials, to the land, and to the simple, genuine gestures that nourish both body and soul.
